Ongebrande noten zijn rauwe noten. Rauwe noten bevatten nog steeds de van nature aanwezige voedingsstoffen. Deze voedingsstoffen verdwijnen zodra de noot behandeld ofwel gebrand wordt. Het branden van noten is eigenlijk het frituren van noten in olie. Door te frituren worden er vetten aan de noot toegevoegd en verdwijnen er voedingsstoffen die niet tegen hitte kunnen.
