Cuzinhia cristang

Celine Marbeck, de Euraziatische Cordon-Bleu-chef uit Malakka in Maleisië, introduceerde in 2000 de cuzinhia Cristang (Cristang keuken), een Portugese mengkeuken met Nederlandse, Chinese en Maleise invloeden, op de Pasar Malam Besar (nu Tong Tong Fair) in Den Haag. De Cristang keuken ontstond in Malakka dat vanaf 1511 tot de onafhankelijkheid in 1957 achtereenvolgens in Portugese, Nederlandse en Britse handen was.Tijdens haar kookdemonstraties op de Pasar Malam Besar kreeg Celine Marbeck veel reacties uit het publiek vanwege de verwantschap tussen de Indische keuken en de Cristang keuken. Het bracht Stichting Tong Tong, verantwoordelijk voor het culturele programma op de Pasar Malam Besar, op het idee om die recepten te bundelen in een kookboek. Het fraai vormgegeven 'Cuzinhia Cristang, een mengkeuken uit Malakka' is het resultaat. Het is de eerste Nederlandse uitgave over de Cristang keuken, met artikelen over de ontstaansgeschiedenis en natuurlijk vele recepten. Net als de Indische is ook de Cristang keuken Â¿ beide fusion keukens avant la lettre Â¿ geschikt voor een eenvoudig maal èn sprankelend genoeg voor een overdadig banket.
